Grilled Pork Brochettes with Confetti Rice Pilaf

Prep Time: (marinade for 2 to 4 hours), then 20 minutes Cook Time: 10-15 minutes.

Pork Brochettes: 2 lb. boneless pork loin (cut into 1″ cubes) 1 cup soy sauce cup dark brown sugar cup apple cider vinegar 2 tbl. dry mustard 1 tbl. worcestershire sauce 1 ea. 1 gal. ziploc storage bag 8 ea. 6″ bamboo skewers (soaked for 30 minutes in boiling water)

method: Bring 8 oz of water to a boil and put skewers in so they are completely covered with water and allow to soak for 30 minutes.

Mix soy, brown sugar, vinegar, mustard and worcestershire sauce and carefully pour into ziploc bag, place pork cubes in bag and push out all air and seal bag. allow pork to marinade for 2 to 4 hours.

Skewer pork placing approximately 4 oz of pork per skewer, grill on and open fire that is of medium high heat or grill in an a grill pan, in either case cook all four sides of skewers for 10 to 15 minutes per side. serve on confetti rice and enjoy.

Confetti Rice: 1 cups of converted rice 3 cups of chicken broth cup golden raisins cup granny smith apples (diced to approximate size of raisins) cup onions (diced as above) cup red bell peppers (diced as above) 3 cloves of garlic (minced) zest of 1 lemon (minced) bunch mint (stemmed and finely chopped) cup olive oil

method: Bring chicken broth to a boil and add rice, bring back to a boil and turn down to low and cover, allow to cook for 25 to 40 minutes. in a separate pot large enough to accommodate rice and all other ingredients, place on a burner set to medium heat and add olive oil and allow to heat, then add raisins, apples, onions, peppers, garlic and lemon saut until onions are translucent add cooked rice and mint and mix well.

Place in center of plate placing 2 brochettes over the top and enjoy.

Johnsonville Big Taste Grill is a popular presence at American outdoor events, especially when funds raising is needed for charity.

Still, for those who have never heard of the touring big grill, here are some details: in 1995, at the 50th anniversary of the famous sausage producer Johnsonville Sausage a family owned business in Wisconsin, the first Johnsonville Big Taste Grill was launched, world’s largest touring grill. Largest gas grill, that is a truck weighing more than 53,000 pounds and measuring 65 feet long, equipped with all necessary utilities to feed a hungry crowd hot and cold running water, a prep station and a refrigeration unit. The capacity of the grill is 750 brats at a time and around 2,500 per hour.

The funds raised by sales at the grill are used for the benefit of local charities or non-profit organizations. Over the years, over 1.5 million dollars were raised for charities across the United States and Canada.

The Big Taste Grill is a sight itself: even those who are familiar with truck grills, seeing this one for the first time are impressed with its enormity and uniqueness. Thus a great opportunity is offered for people to contribute to preferred charities in a pleasant way.

One of the latest apparitions was at a fund raise for a local non-profit, at the Oconee County on 26-27 November.

Grilled albacore tuna steak recipes add flair to your dinner table. Asians have a way of spicing up any fish dish with their own wasabi powder. This is a Japanese horseradish and many chefs today use this spice to bring a very unique flavor to tuna steak.

Here is just once example of grilled albacore tuna steak recipes that use the spice above. You will need to have the following ingredients to prepare this delectable meal; tuna steaks, cup of teriyaki marinade, 4 ounces of butter or margarine, 1 tablespoon of wasabi powder, 2 chopped green onions, 1 tablespoon of olive oil, peanut oil, or vegetable oil, salt and pepper. First you will need to marinate your tuna steaks in the teriyaki marinade. You should place the tuna steaks in the marinade and turn to coat the entire steak in the marinade. Marinate for at least one hour in a covered dish in the refrigerator. You can marinate overnight if you prefer. When you ready to cook your meal, mix together the wasabi powder and green onions in a bowl and set aside. Get your grill ready; lightly brush your tuna with the oil and season with the salt and pepper. You can use the remaining marinade to baste your tuna steaks while they are grilling.
